Oolong Tea

Arguably one of the most complicated teas to produce, oolong teas are semi-oxidized in a masterful process of rolling, shaping, and bruising the leaves, creating a complex and character-driven tea. The genetic strains or cultivars of the tea plant play an important role in oolong production. There are many different cultivars that can make an oolong, resulting in varying styles and flavors, similar to that of grapes off the vine producing hundreds of different wine varietals. To complicate things further, oolongs can also be roasted and baked to bring out their nuttier and more caramelized notes, so the true nature of oolong is an always ever-evolving journey.
